CHICKEN, SOBA AND NORI BOWLS
Oct 17, 2018With the weather warming up I love coming up with easy dishes you can just throw together with bits and bobs you might already have in the kitchen. This dish has so many highly nutritious foods in it from shiitake mushrooms, avocado, nori, radish, bok choy, spinach plus some ingredients to balance it out like chicken and soba noodles. This will be a good go to for when you want a light meal that still tastes amazing!
Serves 4
Ingredients
2 cups cooked shredded chicken
½ cup dried, sliced shiitake mushrooms
2/3 packet soba noodles
2 handfuls baby spinach
1 Bok choy, washed and finely sliced
8 radish, thinly sliced
1 cup edamame beans
1 avocado, sliced
4 sheets nori, roughly torn/sliced
2 tablespoons sesame seeds
Dressing: 2 tablespoons apple cider vinegar, 2 tablespoons tamari, 1 tablespoons lemon juice, 1 teaspoon sesame oil, 1 teaspoon honey, 1 tablespoon ginger.
Directions
Place the shiitake noodles in a bowl and pour over some boiling water. Meanwhile, cook the soba noodles according to packet instructions, then drain.
Combine the spinach, bok choy and radish and place in four bowls. Divide the chicken, edamame and avocado among the bowls.
Next divide the soba noodles, edamame and drained shiitake noodles between the bowls. Top each bowl with nori and sesame seeds.
Pour over the dressing and serve.
