GARLIC PRAWNS WITH CHARRED BROCCOLI AND SOBA
Jul 28, 2015This recipe came to life after posting about what I consider one of the most healing foods available - garlic! I asked my Instagram followers if they liked the sound of this meal and it was a big yes, plus once I had the idea in my head I knew I had to give it a try...and boy am I glad I did! It's super easy but so delicious and covers all the bases for a well balanced meal. Protein from the prawns, long lasting carbohydrates from the noodles (use buckwheat for gluten free), 3 different kinds of green vegetables, butter for healthy fats (buy a good organic kind or make your own), and some kim chi for fermented gut healing goodness.
But garlic is where it's at! Anti-viral, anti-bacterial and anti-inflammatory is has been used for years for all kinds of healing...but the catch...it's best raw! In this meal the garlic is only cooked for 5 minutes but for extra benefits try adding some finely chopped raw garlic to your kim chi to take away the pungent flavour. And maybe don't try this dish on date night :)
Serves 4
Ingredients
20 fresh prawns (peeled)
2 cloves garlic, crushed
1 tablespoon butter
½ large chilli, finely chopped (optional)
1 broccoli, broken into florets and each cut in half lengthways
2/3 packet of soba or buckwheat noodles
1 zucchini cut into spaghetti pasta
4 handfuls of spinach
4 tablespoons kim chi (Wild Ferments is my favourite!)
Directions
Bring a pot of water to the boil for your noodles. Meanwhile steam the broccoli until just tender but still firm. Add your noodles to the water and cook according to packet instructions, adding the zucchini noodles in the last minute. When ready add the spinach and then drain.
Heat a grill pan to high heat and char-grill the broccoli until the grill marks have appeared.
Meanwhile heat another pan to medium heat and add the butter. When melted, add the garlic and chilli for 30 seconds, and then add the prawns for 3-4 minutes or until cooked through.
Divide the noodles between four bowls and top with the broccoli, prawns, kim chi and extra fresh chilli.
