HEALTHY ZUCCHINI SLICE WITH HERBS & TOMATO
Mar 19, 2020Some of you may have seen it on my Instagram last week so here is this super simple yet delicious slice. With both zucchini and tomato in season at the moment you could whip this up as a budget meal in no time, and even better - source the ingredients organic from your local farmers market.
When is zucchini in season?
In Australia, zucchini peaks in summer and autumn months. Take advantage of zucchinis when they are at their best during this time to whip up my zucchini slice. Zucchini’s are also very easy to grow yourself and this means you can use the beautiful zucchini flower also which you don’t find when purchasing it.
Other ways to use zucchini:
I love zucchini because I think it is a relatively non-offensive vegetable and due to it’s high water content it lends well to be added to;
-
Smoothies (try my Choc-ini Smoothie)
-
Fritters (surely you’ve tried my Haloumi & Corn Fritters using zucchini?)
-
Bolognese sauce or even as zoodles (see Veggie Packed Bolognese)
